There’s nothing quite like coming home to the comforting aroma of a pot roast that’s been simmering away all day. This 5-ingredient slow cooker pot roast is a lifesaver for busy weekdays when you want a hearty meal without the fuss. Using a chuck roast, which is perfect for slow cooking, this dish is all about simplicity and flavor. It’s one of those recipes that feels like a warm hug after a long day, and it’s been a staple in my kitchen ever since I started juggling work and my love for cooking.
This pot roast pairs beautifully with classic sides like creamy mashed potatoes or buttered egg noodles. For a pop of color and a bit of crunch, try serving it with steamed green beans or a fresh garden salad. If you’re feeling a bit more indulgent, a slice of crusty bread is perfect for soaking up the delicious gravy.
Ingredients
3-pound chuck roast
1 packet of onion soup mix
1 cup beef broth
4 large carrots, peeled and cut into chunks
3 large potatoes, peeled and quartered
Directions
Place the chuck roast in the bottom of your slow cooker.
Sprinkle the onion soup mix over the roast.
Pour the beef broth around the roast.
Add the carrots and potatoes around the roast.
Cover and cook on low for 8-10 hours, or until the meat is tender and easily pulls apart with a fork.
Variations & Tips
For a bit of extra flavor, you can add a splash of red wine to the beef broth. If you like a bit of spice, try adding a teaspoon of crushed red pepper flakes. You can also throw in some sliced onions or mushrooms for added texture and taste. If you’re watching your sodium intake, consider using a low-sodium beef broth and onion soup mix.
